Foule Mudammas (pronounced fool mu-dah-mahs), is a popular Middle Eastern dish made from fava beans. Sometimes spelled foul mudammas or ful medames or foul madammas and often referred to as simply “ful or fool,” this dish is a staple during breakfast and lunch, and also during Ramadan before sunrise.
It is said to have originated in Egypt but is served in different recipes throughout the Middle East. The base of the dish tends to be the same comprising mostly of fava beans, garlic, lemon juice and olive oil. However, some variations include tomatoes, spices, mashed or whole fava beans.
